What is the significance of "Hebrew" in Hebrew being "Ivrit?"

What is the grammatical difference between the Hebrew word "KOL" being spelled with a kamatz or a cholem?

my favorite book for learning Hebrew is Zola's Introduction to Hebrew.  Very easy to learn the letters, alpha beit, and then the pronounciation with vowels.  I made myself flashcards so I could shuffle them up and learn them on sight, not in order.  The book has lots of Hebrew Prayers and stuff.  Heartily recommended.  It cost me $50 but I believe they have lowered the price now.
